Cook up something sweet for your sweetheart

Looking for something special you can bake for your sweetheart this Valentine's Day?  Or perhaps you would like to tuck a special little treat in your children's lunchboxes on Valentine's Day?  Here are some delectable recipes you might like to try:

White Chocolate Ganache Cake with Kahlua Sauce

Cinnamon Hearts

Sweetheart Snickers Fudge

Chocolate Cinnamon Fondue

 

White Chocolate Ganache Cake with Kahlua Sauce

To make the white chocolate ganache: 
1 3/4 c.  whipping cream
3 1/2 oz.  chopped white chocolate
1/4 tsp. vanilla
Prepare ganache before mixing and baking cake; it should be refrigerated 4-5 hours or until very thick.  In large bowl of electric mixer, combine whipping cream and chocolate. Set over simmering water until chocolate is melted. Stir until smooth. Refrigerate until very thick, then add vanilla and beat until stiff. 

To make the cake:
2 oz white chocolate
1/2 c  whipping cream
1 1/3 c  sifted cake flour
1/2 tsp.  baking powder
Dash of  salt
1/4 c.  butter, (softened to room temperature)
1 c.  sugar, divided
1 egg
1 separated egg
6 tbsp. milk (warm to room temperature) 

Melt chocolate in a double boiler.  Add whipping cream together. Stir until smooth. Set aside until cooled.  Put  cake flour , baking powder, and salt in a bowl and mix together with electric mixer. Gradually add  3/4 cup sugar and the butter. Beat in whole egg, egg yolk, and milk until smooth. Stir in cooled chocolate. In small bowl, whisk egg white with salt until soft peaks form. Add  remaining  sugar, beating until thick and glossy.  Gently fold egg white into batter. Pour batter into 8 or 9 inch heart shaped cake pan which has been lightly greased with non-stick spray. 

Bake in oven at 350 degrees Fahrenheit for about 40 minutes or until wooden toothpick inserted in center comes out clean. Cool in pan for 10 minutes. Remove from pan, transfer to serving plate and cool completely.  When it has cooled, use a toothpick to poke holes (about 1 inch apart) in the top of the cake. Frost with white chocolate ganache.

 

To make the Kahlua syrup:       
3 tbsp. wWater
1 tsp. instant coffee powder
1 tsp. sugar
1/4 c.  Kahlua

Cinnamon Hearts
2 c. flour
3 oz. sugar
7 oz. butter 
1 egg, separated (whip egg white)
cinnamon
sugar
Mix flour and sugar together until well blended; cut in butter. Add  egg yolk and work the dough together quickly. Refrigerate for about an hour. Roll out the dough and cut out hearts shapes with cookie cutter. Brush lightly with whipped egg white. Dip in a mixture of sugar and cinnamon. Bake at 325 for 10 to 12 minutes.

Sweetheart Snickers®  Fudge

1-14 oz. can of sweetened condensed milk

1-20 oz. bag of chocolate bark, broken into pieces

2 c. Snickers®   Miniatures for Valentine's Day, chopped and divided

1/2 tsp. vanilla

1 bag DOVE® chocolate hearts (optional)

Melt chocolate coating in microwave on low until smooth. Add the sweetened condensed milk after chocolate is melted and mix thoroughly. Mixture will become stiff. Add vanilla and 1 cup of SNICKERS® and mix thoroughly. Place into a 9-inch pan, lined with wax paper. Sprinkle the remaining cup of SNICKERS® onto the top and press gently to adhere.    Optional: Melt 20 DOVE® Chocolate Hearts in a microwave on low. Using the tines of a fork, drizzle the melted DOVE® Chocolate Hearts on top of the fudge. Place into refrigerator until set, about 2 hours. Unmold and remove wax paper, then cut into squares.

 

Chocolate Cinnamon Fondue

1/4 c. margarine
8 oz. bittersweet chocolate
1/4 c.  all-purpose flour
2 c. light-colored corn syrup
1/4 c.  coffee-flavored liqueur
1/2 tsp.  ground cinnamon
Melt margarine and chocolate in a small saucepan over medium heat. Add flour, stirring with a wire whisk until blended. Cook 1 minute, stirring constantly. Add corn syrup and coffee flavored liqueur, and cook 1 minute. Remove from heat; stir in cinnamon. Pour into a fondue pot, and keep warm. Serve fondue with strawberries, banana chunks, orange sections, and cubed low-fat pound cake. Yield: 3 cups (serving size: 1 tablespoon). Note: If fondue is not served immediately, place heavy-duty plastic wrap on surface of container.
